Bianca degli Svevi comes from grapes cultivated in Re Manfredi's vineyards in soils of volcanic origin, typical of the area. The volcanic soils and strong temperature excursions enhance the peculiarities of the grapes, giving this wine an enveloping minerality that plays intriguingly with a pleasant softness.

In the mouth, the wine expresses all its evolution of aromatic essences and presents an excellent balance between its softness and solid fresh and mineral structure.

Fish dishes, especially shellfish and tuna - Sushi and Sashimi.Excellent with fresh Lucanian cheeses and typical dishes such as stuffed pumpkin flowers and stewed rabbit.

Part of the grapes are cold macerated on the skins for 24 hours, the must ferments at temperatures between 12/16°C. At the end of fermentation, the wines are matured on the fine lees for about two months. A small part undergoes maceration and fermentation on the skins in alternative containers, including terracotta amphorae and wooden barrels.
