Historical is a project that originates thanks to a profound knowledge of Umani Ronchi's land, exactly from a small isolated plot located within the historic vineyards of Montecarotto, in the Castelli di Jesi Classico area. Historical is the story of a project and of a goal, a wine destined to refine over 5 years before revealing itself, with the romantic and concrete aim of being counted among the greatest Italian and world excellences of wines produced by non-aromatic white varietals.

After a light pressing, the free run must is rapidly cooled and then goes through static decantation. The fermentation, in steel tanks at a temperature ranging from 16 to 18°C, lasts for 15-20 days. The wine does not undergo malolactic fermentation.

18 months in concrete tanks, during which the wine remains in continuous contact with its lees. This is followed by the racking of the must by natural sedimentation into another small stainless-steel container. The wine rests here for about 36 months until bottling, which takes place at least 6 months before being released.
