One of the most famous DOCG wines of the Veneto region, Amarone della Valpolicella is produced using the unique 'Appassimento' method from Corvina and Rondinella grape varieties.
The carefully selected grapes are put in small crates and dried in ventilated rooms for three months. When they reach the perfect grade of dryness, they are pressed and fermented in temperature-controlled stainless steel tanks. The fermentation lasts for 30 days and develops high alcohol contents. Overall, the grapes of this Amarone have been dried for 120 days
Ripasso is produced in Valpolicella where the Amarone pomace is added to the grape must and fermented together yielding a more intensely flavoured wine with deeper color.

2020 Ripasso della Valpolicella
The blend is made up of Corvina Veronese, Corvinone and Rondinella. It is made in the 'ripasso' method on the Amarone's residual pomace after the macerating for 15 days followed by a 10 months aging in barrel.
The result is an elegant wine, while still ripe and supple, juicy with acidity and expressing roasted coffee and red fruits on the palate with a long, soft finish.

2020 Amarone della Valpolicella
The drying of grapes prior to fermentation contributes deep intense garnet red colour and a persistent bouquet with hints of bitter cherries, prunes and sweet spices and flavours of dried cassis, figs and dates.
A fruity and medium body and a subtle, medium-long finish with touches of espresso bean and with light oak flavour.
Great match with aged cheeses. A powerful wine at 15% alcohol
