The best bunches are selected and collected by hand from our vineyard located in Via Rebecchi72. After a soft crushing, takes place the first fermentation at a controlled temperature. The taking of foam is by in bottle natural fermentation thanks to the inner residual sugars. Not being performed any disgorging, the yeasts sediment create the so-called bottom.
